Bobó de camarão, fácil de fazer

Um clássico culinária brasileira, o bobó de camarão tem origem na cozinha africana. Com aspecto cremoso, a receita leva camarão, mandioca, leite de coco, azeite de dendê e outros ingredientes muito fáceis de achar.
Antes de dá inicio no preparo da receita, lembre-se de cozinhar a mandioca na panela de pressão por 20 minutos para que ela fique bastante macia.

INGREDIENTES

  • 1 kg de camarão fresco
  • sal
  • 3 dentes de alho picados e amassados
  • suco de 1 limão
  • pimenta-do-reino
  • 1 kg de mandioca (prefira as que já vem embaladas e descascadas, é mais prático)
  • 3 cebolas (1 cortada em rodelas e 2 raladas)
  • 1 folha de louro
  • 6 colheres (sopa) de azeite de oliva
  • 2 vidros de leite de coco
  • 1 maço de cheiro-verde picado
  • 2 latas de molho pronto de tomate
  • 2 pimentões verdes bem picadinhos
  • 2 colheres (sopa) de azeite de dendê

MODO DE PREPARO

  1. Lave os camarões e tempere com sal, alho, pimenta e limão, deixe marinar.
  2. Pegue uma panela com água e cozinhe a mandioca em pedacinhos, com louro e a cebola em rodelas.
  3. Quando estiver mole, acrescente um vidro de leite de coco.
  4. Deixe esfriar um pouco e bata no liquidificador.
  5. Esquente o azeite de oliva, junte a cebola ralada e deixe dourar.
  6. Acrescente os camarões e frite.
  7. Adicione as 2 latas de pomarola, o cheiro-verde, o pimentão e deixe cozinhar por alguns minutos.
  8. Junte na mesma panela, a mandioca batida no liquidificador, outro vidro de leite de coco e o azeite de dendê.
  9. Deixe levantar fervura e está pronto.

ENSOPADO DE CAMARÃO

INGREDIENTES

  • 390g de camarão fresco descascado
  • 3 dentes de alho
  • 2 colheres (sobremesa) de sal
  • 4 colheres (sopa) de coentro picado (4 galhos de coentro)
  • 2 tomates picados
  • 1 cebola média picada
  • 1 pimentão verde pequeno bem picado
  • 4 colheres de sopa de cebolinha picada
  • 2 xícaras (chá) de leite de coco (500ml mais ou menos)
  • 4 colheres (sopa) de azeite de oliva

MODO DE PREPARO

  1. Tempere o camarão com alho amassado, 1 colher (sobremesa) de sal e 1 colher (sopa) de coentro.
  2. Deixe na geladeira por 30 minutos mais ou menos. Coloque a cebola, o restante do sal, o tomate, o pimentão, o coentro e a cebolinha numa vasilha e “pile” bem os temperos.
  3. Divida em duas partes. A primeira parte acrescente aos camarões e leve ao fogo, mexendo com uma colher de pau.
  4. Junte o leite de coco e o azeite e continue mexendo. Quando o camarão mudar de cor, adicione a outra parte dos temperos e mexa.
  5. O prato vai estar pronto quando o camarão estiver completamente rosa. Coloque numa vasilha de barro, decore com fatias de tomate, cebola e pimentão. Acompanha arroz e pirão.

BOBÓ DE CAMARÃO COM ABÓBORA

INGREDIENTES

  • Cebola 1 unidade(s)
  • Alho (dente) 2 unidade(s)
  • Gengibre picado1 colher(es) de sopa
  • Pimenta dedo de moça picada 1/2 unidade(s)
  • Azeite 2 colher(es) de sopa
  • Azeite de dendê 2 colher(es) de sopa
  • Tomate italiano maduro com casca e semente 1 unidade(s)
  • Pimentão vermelho 1/2 unidade(s)
  • Pimentão amarelo 1/2 unidade(s)
  • Mandioca 500 g
  • Abóbora japonesa (cabotia) 700 g
  • Água quente 600 ml
  • Coco seco fresco 1 unidade(s)
  • Limão Tahiti 1 unidade(s)
  • Coentro a gosto

MODO DE PREPARO

  • Coloque a mandioca descascada pra cozinhar em panela de pressão com água até cobrir. (Depois que chiar conta 25 minutos, retira da água e amassa com o garfo)
  • Descasque a abóbora corte em cubos, coloca numa tigela de vidro ou porcelana com 2 colheres de sopa de água, tampe com um prato e leve ao microondas por 8 minutos. Retire com cuidado o prato (vai estar quente) e amasse a abóbora com um garfo. É pra ficar com pedacinhos mesmo! Fica bom!
  • Coloque no liquidificador o coco e acrescente 600 ml de água fervendo. Bata por 3 minutos. Coe com um pano limpo separando a farinha de coco e o leite de coco (use a farinha de coco pra fazer uma farofinha)
  • Numa panela aqueça o azeite e o azeite de dendê. Doure a cebola o alho, gengibre e a pimenta (por 2 min). Em seguida acrescente o tomate e os pimentões picados. Deixe cozinhar bem e murchar.
  • Junte a mandioca e a abóbora amassados e o leite de coco. Se precisar de mais líquido, acrescente o caldo de cozimento da mandioca. Acerte o sal e acrescente o camarão. Deixe cozinhar por 5 minutos no caldo fervendo.
  • Desligue o fogo e finalize com coentro picado e suco de um limão (esse suco de limão é o pulo do gato! Ele da a acidez perfeita e necessária pra mudar todo o prato!)
  • Sirva com arroz e farofinha (eu fiz uma farofa com o coco que sobrou do leite de coco, farinha, óleo de coco dendê e raspa de limão! Fica sensacional)
