Bolo de mandioca

Ingredientes:

  • 2 e 1/2 xícaras de açúcar
  • 1 garrafinha de leite de coco
  • 1 kg de mandioca descascada e ralada
  • 150 gramas de manteiga
  • 2 ovos
  • 1 pitada de sal
  • Para o molho
  • 1/2 garrafinha de leite de coco
  • 4 colheres de sopa de açúcar

Modo de preparo:

  1. Aqueça o forno em temperatura alta (200ºC) e unte uma forma com buraco no meio com manteiga e enfarinhe.
  2. Se ralar a mandioca bem fininha, esprema para tirar um pouco da goma. (Eu ralei mais grossinha)
  3. Bata a manteiga com o açúcar até ficar cremoso. Adicione os ovos e continue batendo.
  4. Acrescente o leite de coco e, por último, a mandioca e o sal. Misture bem.
  5. Despeje a massa na forma. Leve ao forno por cerca de 40 minutos quando deve ser colocado o molho. Para o molho, misture o leite de coco e o açúcar. Devolva ao forno e asse até ficar bem dourado (o tempo vai depender do forno). Retire do forno e deixe esfriar para desenformar
